
Located on the top of a hill and protected by solid walls, the Oliveto Castle is an ancient residence built in 1424 by the noble and prestigious Tuscan family of Pucci, designed by Filippo Brunelleschi, a famous Florentine architect who designed the Dome of Santa Maria del Fiore in Florence.
Lorenzo the Magnificent, Popes Leo X, Clement VII and Paul III, the Grand Duke of Tuscany Ferdinando III, the King of Italy Vittorio Emanuele III are some of the great characters who were guests at the Castle of Oliveto in the past centuries.
Today, the Castle of Oliveto is a modern farm that extends for 1200 hectares of which 50 are cultivated with vineyards from which excellent quality wines are aged in the ancient cellars of the castle.
It is in this magnificent setting rich in 600 years of charm, history and art, surrounded by a splendid landscape of the Florentine hills, that the Oliveto Castle offers a tasting of its wines accompanied by typical local products and a visit to the historic cellars.

Castello di Oliveto's wines
Bianco dei Papi is a wine made from Chardonnay and Vermentino grapes vinified separately in steel vats and in the absence of oxygen at low temperatures to maintain the typical aromas of these vines. The refinement takes place on the fine lees for about 4 months with repeated "batonage" and then in the bottle for at least 3 months.
The result is a wine with a straw yellow color and an aroma of fresh flowers and honey, ideal as an aperitif and to accompany appetizers and fish dishes.
Denomination of origin: Bianco Toscana IGT
Alcohol: 13% vol. - Grapes: Chardonnay 50%, Vermentino 50%
Chianti Riserva Castello di Oliveto comes from Sangiovese grapes for 90% and small amounts of Colorino and Merlot. Aging takes place in steel vats with maceration on the skins for about 15 days, with frequent pumping over and oxygenation and then aged in "Slavonian oak" barrels for about 24 months. Subsequently it is aged in bottle for 6 months.
Chianti Riserva Castello di Oliveto is an elegant and full-bodied wine with a ruby red color with garnet reflections and a hint of red fruits, characteristics that are even more exalted when paired with red and roast meats, seasoned cheeses and soups.
Denomination of origin: Chianti Docg
Alcohol: 13,5% vol. - Grapes: 90% Sangiovese, 5% Colorino, 5% Merlot
Paolo III is produced with Merlot and Cabernet Sauvignon grapes, vinified in steel vats with long maceration on the skins for at least 20 days. It is aged for 12 months in French oak barrels and then for 6 months in 25 Hl "Slavonian oak" barrels. Finally, it is further refined in the bottle for at least 8 months.
The result is a wine with an intense and persistent aroma with hints of vanilla, liquorice and red berry fruits, ideal to accompany game, braised and roasted meat dishes.

Alcohol: 13,5% vol. - Grapes: Cabernet Sauvignon 50%, Merlot 50%
