Ceccardi Giacomo is a cheese producer who owes his passion to his grandparents: shepherds and cheese producers who lived in Vaglie (a small fraction of the town of Ligonchio located on the Tuscan-Emilian Apennines).

From here, during the winters, because of transhumance, they brought their flocks to graze in Tuscany, especially in the hills between Florence, Pisa and Volterra, until, in the '50s /' 60s, they decided to move permanently to "Sughera" in the territory of Montaione.

Since 1986, Ceccardi Giacomo, is a dairy that produces high quality cheeses with pure sheep milk exclusively from local suppliers (Peccioli, Montaione, Castelfiorentino, San Miniato) with grazing livestock.

Opening hours and services

Ceccardi Giacomo waits for you in his shop and laboratory in Sughera during the following times:

Monday, Wednesday and Friday: 08: 00-12: 00/14: 30-16: 30
Tuesday, Thursday and Saturday: 15: 30-19: 00
Sunday: 10: 00-12: 30/15: 00-18: 00

(Times may vary according to workflows so it is advisable to call for an appointment).

The cheeses of the Ceccardi Giacomo cheese factory

Fresh Ricotta
Produttore: Ceccardi Giacomo
Rich in proteins, mineral salts and vitamins, low in fat, fresh ricotta is a dairy product obtained from whey (the liquid part that remains after making cheese), it is easily digested and much loved, even by children.
It is consumed alone to appreciate all the flavor, but it is also excellent with honey or in combination with other cheeses and cured meats.
Fresh ricotta is also used as a base for some typical Tuscan recipes.
Fresh Pecorino
Produttore: Ceccardi Giacomo
Pecorino is one of the best known Tuscan cheeses. This pecorino, made exclusively from sheep's milk from the neighboring farms, is particularly appreciated for its fresh and gentle taste with a delicate smell of butter and hay. The thin, yellow crust is smooth and soft.
This pecorino cheese is available with various seasonings ranging from fresh daily to mature from 15 days to 3 months.
Ripened Pecorino in Caratello (Kegs)

Born from research and passion of our cheese farm, this pecorino cheese is prepared in July.
After 40 days aging, it is coated with the must of "vinsanto" and oil covering the whole peel. Then, it is wrapped in a cloth and placed inside a "caratello" (a small wooden barrel) and seasoned until October / November.
When ready, this pecorino has a more delicate flavor and a sweet vinous smell, characteristics that fade over time to leave room for the aromas and flavors typical of seasoned pecorino.
