Pecorino sotto Cenere - Ceccardi Giacomo
With black skin and white and tasty pasta. The special under ash treatment keeps the pasta soft despite the seasoning. Excellent pairing with jams or fresh fruit.
PRODUCTION
Produced with pure sheep's milk from local farms, pasteurized and seasoned on a wooden table. Treated with oil and ash after 3 months of seasoning.
INGREDIENTS
Sheep milk, rennet and salt.
MATURING
3-6 months (keep in a cool and ventilated place, possibly wrapped in a cloth).
PRODUCTION PERIOD
Seasoning begins in January. Treatment with ash and oil after about 3 months. Ready for sale during Easter while stocks last.
